Homemade Granola Bars

*The peanut butter and almond flour in this recipe can be swapped out for your nut butter of preference to adjust for any nut allergies.

 

As a mom to three, four and under, granola bars are a huge hit in my household. Unfortunately, there aren’t really many on the market that are made with quality ingredients. I was looking for less sugar, syrups, gels, gums – all the things. It’s hard to find a kid-friendly granola bar that isn’t loaded with junk, or outrageously expensive.

 

So, I went on a mission to make some homemade bars my kids will love, AND that are made with healthy, whole food ingredients. And with this recipe, I think I have done just that! Not only do kids love them, but I personally love to grab them for a quick snack when I am on the go or getting ready to head to the gym. They are a nutritious and versatile snack I know you and your people are going to love.

 

 

INGREDIENTS

  • 1c GF oats

  • 1c almond flour (can swap out for coconut flour)

  • 1/2c natural peanut butter (can swap out for nut butter of choice)

  • 1/4c pure maple syrup

  • 2T chia seeds

  • 1t vanilla extract

  • Pinch of salt

 

*Optional add ins – mini chocolate chips, protein powder or collagen powder, shredded unsweetened coconut

 

 

HOW TO MAKE

  1. Combine ingredients together in a large bowl. With your hands, work the granola until it is well mixed and holds together well.

  2. In a lined baking dish (I recommend 8x8), press down batter until it is firmly packed into dish. Place in the freezer to harden ~1 hour.

  3. Remove from freezer and cut into 10 bars. It can be stored in freezer or fridge!
