Dairy Free & Gluten Free Summer Berry Cobbler

Growing up in the south, summer cobbler was a family staple. I have clear memories of my childhood, spending summer afternoons picking wild blackberries and running them home to be washed and prepped to be used for homemade cobbler! Add a big heaping scoop of ice cream to the warm cobbler, this was the recipe to a perfect ending to a summer day. Core memory! No wonder berry cobbler is my favorite dessert!

 

If you’re like me and love cobbler but are looking to make it allergy friendly – look no further. This cobbler is the JAM – it still checks all the dessert boxes, just slightly healthier! Free of dairy and gluten, it’s one everyone can enjoy, even those with allergies. So look no further for the perfect summer dessert recipe.

 

 

INGREDIENTS

For the berries:

  • 2c blueberries

  • 2c blackberries

  • 1 tsp cinnamon

  • juice of 1 lemon

 

For cobbler:

  • 1c cassava flour (or your favorite GF flour)

  • 1/2c brown sugar

  • 1/2c coconut milk

  • 1/4c coconut oil

  • 2tsp baking soda

  • 1/4tsp salt

 

 

DIRECTIONS

  1. Preheat oven to 375F.

  2. Combine the ingredients for the berries and place in a greased baking dish. Bake in the oven for ~15 minutes.

  3. While berries are baking, combine cobbler ingredients in a bowl. The result should be a dry, somewhat crumbly dough. I will often just mix together the ingredients for the dough with my hands!

  4. Remove berries from the oven after ~15 minutes, and crumble cobbler dough topping on top. Place the dish back in the oven and bake ~30 more minutes, or until crumble is golden brown on top.

  5. Remove from the oven and allow to slightly cool before serving alone or with your favorite ice cream!
