Chipotle Honey-Vinaigrette DIY

While the Chipotle restaurant’s dressing is delicious, you can make it right at home with healthier ingredients - and for those that are also vegan or vegetarian, this recipe checks those boxes as well. When trying to eat healthier, a big inflammatory ingredient that is important to remove are seed oils. Sadly, the popular dressing has just that. Luckily, this dupe is free of seed oils, making it an easy healthier swap you can keep in your fridge for any day!
INGREDIENTS
1c extra virgin olive oil
1/2c red wine vinegar
2 pitted dates
1/4c water
1tsp cumin
1tsp garlic
1tsp oregano
1tsp salt
1 chipotle pepper in adobo sauce (I rinse pepper before adding to blender, to reduce the spice level - if you want your dressing spicier, add another pepper!)
DIRECTIONS
Add ingredients to a blender or use an immersion blender until smooth.
Store in fridge for up to a week.
