Easy Summertime Salsa

Servings: makes ~2c salsa


This salsa is loaded with flavor, rich in antioxidants and nutrients from plants and herbs, and will have your taste buds singing! As always, I love to encourage people to shop locally grown produce and take advantage of the flavors that the season provides. This recipe does just that. Make plans to visit your local Farmers’ Market this weekend and add this salsa to your weekend’s menu. You can thank me later! ;)

 

 

INGREDIENTS

  • 1.5 lb fresh red tomatoes

  • ½ small red onion

  • 3 green onions

  • 2 cloves garlic

  • 1 jalapeno (spoon out the seeds for a less spicy salsa)

  • 1 c cilantro

  • Juice of 1 lime

  • 1 tbsp sugar (or sweetener of choice; this will cut the acidity of the lime and tomatoes)

  • Salt and pepper to taste

 

 

DIRECTIONS

  1. Wash and prep all of the vegetables. Cut tomatoes and onion into large chunks, peel garlic, and prep jalapeño as needed.

  2. Combine all ingredients into a blender and blend to desired consistency.

  3. Store in a glass container in the fridge for up to a week – though it is best eaten within the first three days!

 




*A few tips – add salt and pepper to desired preference. If you would like your salsa to be spicier, leave the seeds in the jalapeno and you can even add another small jalapeno and a pinch of cayenne pepper for extra spice!
