No-Fry Chicken Tenders
Alright, this one is for the books. And though we are a very young family (i.e. an 18-month-old, and one arriving in two months), I foresee this recipe will be a forever staple through the childhood years of my kiddos. And let’s be honest, mama can dig some down-home chicken tenders too! I am always looking for those comfort food favorites, without compromising on ingredients and quality. And that is just what you’ll get with this delicious, no-fry chicken tenders.
But another thing that thrills me about this recipe – it is allergen-free for many of those dealing with challenging allergies such as egg, dairy, gluten or peanut. No egg wash for dredging, no gluten-laden batter, and definitely no deep frying in peanut oil! I am the first to sympathize with food allergies; our first had an egg and peanut allergies for his first year, and that can make for some terrifying moments. So to still get to enjoy the comfort foods from childhood for those will allergies, it holds a special place in my heart.
So let’s dive in, shall we??
Ingredients:
· 1 package (or more, depending on family size; just double or triple this recipe as needed) chicken cutlets
· 1.5 c almond flour
· 1 tbsp ground mustard powder
· 1 tsp garlic powder
· 1 tsp paprika
· 1 tsp salt
· Pepper to taste
Directions:
1. Preheat oven to 375°F and line baking sheet with parchment paper.
2. Mix all dry ingredients in a wide-mouthed bowl.
3. Pat dry chicken cutlets in preparation for coating in almond flour “batter”.
4. Once dry ingredients are combined, take patted dry cutlets, one by one and dredge in almond flour mixture, until fully coated. Immediately place onto parchment-paper lined baking sheet.
5. Once all of the cutlets are coated, load into oven! Bake for ~20 minutes, or until chicken is golden brown and cooked to 165°F internally.
6. Allow to cool for a minute, and then serve up with your favorite sauces!
