This salad is a great green addition to your table in those cooler months. Just because the temps outside cool off, doesn’t mean you have to be done with chilled food for the season. This recipe is simple and quick, and will bring those warm flavors to your table. This salad is a great dish for 1, or perfect to bring to any holiday party!
Ingredients
For the Salad
· 3 c mixed greens (or lettuce of choice)
· ½ avocado, chopped
· ½ c fennel, finely sliced
· ½ c pomegranate seeds
· 1/3 c candied pecans (DF), chopped
· 2 tbsp raw pumpkin seeds
· ¼ c goat cheese, crumbled
For the Dressing
· 1/3 c extra virgin olive oil
· 1/3 c balsamic vinegar
· 1 tbsp maple syrup
· 1 tsp dried thyme
· 1 tsp dried rosemary
· ½ tsp garlic powder
· ½ tsp salt
· ¼ tsp pepper
Directions
1. Prep salad ingredients and combine together in a large bowl.
2. Mix salad dressing ingredients together until well blended.
3. If serving right away drizzle dressing over salad and gently toss and serve. If waiting to serve, chill mixed salad in refrigerator and only add dressing once ready to serve.
